Jicama Chips

Another year and someone has made a new resolution to eat sensibly, lose weight and/or be healthier. So, here is another recipe I am sharing for a healthy snack. Which happens to be delicious!

JICAMA CHIPS

Ingredients:

(CHIPS)

1 large jicama

2 cups of palm shortening

(SPICE)

1 tablespoon coconut sugar

1 teaspoon of sea salt

1 teaspoon of minced fresh garlic

3/4 teaspoon of cayenne pepper

1 tablespoon of paprika

How To Prepare:

Cut top and bottom of fresh jicama after previously washing well. Peel off the skin with a potato peeler.

Slice jicama in thin slices. The thinner the better since they will soak up less oil when fried, and you will also end up with more chips. (Amazon.com has some mandoline vegetable slicers for as low as 18.99 which work really well for this.)

In a large frying pan, heat the palm shortening until melted.

Place then, the jicama slices in small batches so they do not get burned and you can flip them often until slightly brown by the hot oil.

Remove them from the pan and place them on paper towels to soak up excess oil.

After the whole jicama is fried, place on a baking sheet and sprinkle over them the blend made with the ingredients for the spice (coconut sugar, sea salt, cayenne pepper, paprika and garlic)

YUMMY! And best of all, guilt-free...
