Asparagus or Tian Men Dong
Asparagus is a veggie packed with good nutrition. Great source of vitamin K , which in turn it is great for our bones, it is also a natural diuretic, anti-oxidant, fiber-packed food, which contains large amounts of vitamin E, folate and other such vitamins.
Here is a favorite recipe of mine to make Asparagus a tasty side dish for my meals.
Mustard Roasted Asparagus
1 pound of asparagus
1 tablespoon of Dijon Mustard
Olive oil
1 tablespoon prepared horseradish
Salt
1 tablespoon of lemon juice (optional)
How to:
Preheat oven to 350 Fahrenheit degrees
Wash asparagus stalks well
Chop the bottoms of the asparagus stalks and discard
In a bowl, mix the mustard, salt, horseradish and olive oil, whisking until blended
Pour the mixture over the asparagus and thoroughly coat them
Bake for 15 minutes until soft, tossing them once or twice while cooking
Serve hot with lemon-crusted salmon for instance. Yummy!
